Monthly First Come First Serve List
ON THE FIRST OF EACH MONTH, we start a FIRST COME FIRST SERVE LIST for the month's orders.
You may text Tracey at (210) 381-5307 with your order requests and quantities of each cut preferred any time of day or night ON THE 1ST (NO EARLIER). If you forget to text on the 1st, you may text as soon as you think of it any day after the 1st that month. The text message requests will be replied to during the day on the 1st to let you know your message was received and that you are on the list. Once we receive our beef back from the processor for the month (usually the first or second week of the month), we will sort and fill all the orders on the list in the order the text message requests were received. Once the orders are filled to the best of our ability with what's available, we will contact you to let you know what we have packed up for you out of what you requested and we'll give you the $ amount due and set up a time for you to pick up when you're available. All By-The-Cut orders must be picked up at our ranch in Marion, Texas. You may pay by cash there at the ranch when you pick up your order or we can invoice you to pay by credit card ahead. There is NO credit card reader at the ranch.
PLEASE NOTE: All credit card transactions include a 3% processing fee.

Our bulk beef is sold by quarters. Our quarters range between 80 - 100 lbs.
$10.00 per pound
for vacuum-sealed cuts with a retail label showing the name of the cut and the weight of each piece

In each 1/4 calf you will receive approximately 40% Ground Beef, 30% assorted steaks, and 30% assorted roasts and "other,"
which includes Brisket, Short Ribs, Flanken Ribs, Stew Meat, Kabobs and Fajita (skirt).
Each 1/4 calf is divided into the following cuts:

Freezer space needed:
•1/4 calf takes up 8-10 cu ft
•1/2 calf takes up 10-12 cu ft
•Whole calf takes up 20-24 cu ft
