PLEASE NOTE: All By-The-Cut orders and By-The-Cut Specials must be picked up at our Marion Ranch or at Farmer's Market

(if ordered ahead of time). You may text or call Tracey at (210) 381-5307 to make your order. If you want to pick up at the market,

you must pay ahead by credit card thru an emailed or texted invoice with a link to pay from. If you come out to the ranch to pick up,

you may pay by cash there at the ranch or we can invoice you to pay by credit card ahead. 

​Bulk Pricing

Our bulk beef is sold by quarters. Our quarters range between 80 - 100 lbs.

$9.00 per pound 

for vacuum-sealed cuts with a retail label showing the name of the cut and the weight of each piece

 

In each 1/4 calf you will receive approximately 40% Ground Beef, 30% assorted steaks, and 30% assorted roasts and "other,"

which includes Brisket, Short Ribs, Flanken Ribs, Stew Meat, Kabobs and Fajita (skirt). 

 

Each 1/4 calf is divided into the following cuts:

Tenderloin Filets (approx 2)

Boneless Ribeyes (approx 4)

T-Bones (approx 3)

NY Strips (approx 4)

Sirloins (approx 2)

Cutlets (approx 8) 

Flat Iron or Tenderloin Tip (1 or the other)

Tri-Tip or Petite Tender (1 or the other)

Bavette or Picanha (1 or the other)

Chuck Roasts (approx 2)

Arm Roast (1)

Rump Roast (1)

Brisket (1)

Fajita (inside or outside skirt) (1)

FREE HOME DELIVERY 

BULK PURCHASES ONLY in the San Antonio area

 

Freezer space needed:

•1/4 calf takes up 8-10 cu ft

•1/2 calf takes up 10-12 cu ft

•Whole calf takes up 20-24 cu ft

The freezer life for vacuum packed is about 1 to 1.5 years.

We accept cash, check (with proper ID) or credit card.


The down-payment to reserve your bulk portion is $300 (non-refundable) with the remainder due upon delivery.
